Essentially self-tought, Mimmo was only 16 when he came out of Scueola Albergliera, Di Napoli, Italia (Culinary Institute of Naples, Italy). Arriving in New York, he did his first steps at Peppino's and Carlo's Restaurant. Then by the age of 20, he was already on his own with Delio's Restaurant in New Jersey. In the early 70's, he moved to Florida as he developed menus and concepts for himself and his family memebers. These include Pizza Queen, Gigio's, Aldo's, San Remo's, Sleepy Hollow, Golden Heron, The Italian Garden, The Italian Grill, Pomodoro Grill, and now with the new concept of Scampi Grill. Since then he has won Editor's Choice Award at the Orlando Food Expo, and attracted attention for his eco-friendly atmosphere as well as his culinary inventions in Vero Beach, FL.

Mimmo's many interests beside cooking include soccer, cycling, and oil painting. This old passion for painting is now starting to win acclaim among his steady guests at Mimmo's Scampi Grill.

Living by his own creed and philosophy, his personal life is a remarkable story filled with challenges, hard work, and despite all, a wealth of good fortune and fantastic artistic talent in "Palate and Palette".
